Armenian rice soup "Kiufa"


    • Meat broth: 2 l
    • Rice: 3/4 cup
    • Ground Lamb or Pork: 500 g
    • Eggs: 3
    • Onion: 1 large
    • Butter: 1 tablespoon
    • Milk: 1 tablespoon
    • Ground pepper
    • Salt
    • Finely chopped greens (parsley, dill, etc.)

    Recipe Instructions:

  1. Wash the rice and add in meat broth. In a frying pan with a little bit of oil, cook chopped onions. Add onions to a broth. In ground meat beat an egg, season some salt, ground pepper, spices or greens. 2 - 3 tablespoons of rices pour into the strainer, when drains, add the rice into meat and mix everything. With your hands, shape large 8 meatballs, and add them to the soup. Cook on a low heat. Take the rest 2 eggs and beat them with milk. Slowly, always stirring, pour egg-milk mixture it to the soup. When meatballs are cooked, grab them from the soup, put into bowl, pour soup on the top. Season with some greens.
