Potato, chorizo and egg casserole is a simple and delicious dinner. Just a few ingredients and a filling dish is on the table. While potatoes are baking in the oven, you can clean up the kitchen or do something useful during that time (for example, as I do, check your Facebook or Instagram, in other words, keep up with the news :D). When the potatoes are done, add the slices of chorizo, add the eggs, then 5 minutes in the oven and the dinner is ready. Simple, right? And it’s a bit healthier option than fried potatoes, because they are not soaked in grease like when you fry them in a frying pan.
Instead of chorizo you can use another harder smoked sausage. You can also sprinkle potatoes with your favorite potato seasoning (only if you use salt as well, then do not add too much, that it wouldn’t be too salty).
P. S. The casserole is very delicious when accompanied with milk or buttermilk.
