Zucchini and Cheese Pancakes
When “Užgavėnės“ (a traditional Lithuanian festival) is next week, somehow I just naturally want pancakes… The thing with pancakes is that during “Užgavėnės“ everyone in Lithuania makes all kind of pancakes, it’s a very traditional meal on that day. Plain pancakes are very boring, I bet everybody had more than enough during childhood, but zucchini and cheese pancakes it’s a very different stuff. Flavorful, soft and suitable with a wide variety of sauces. Such pancakes can be served for lunch and for dinner. If you cut the pancakes in pieces, you will get a great snack. To make these pancakes choose a harder cheese. Also, instead of cheese you can use farmer’s cheese, only the best would be to use dry farmer’s cheese, otherwise it would liquefy the batter. You will get about 12 pancakes in total, according to the specified amount of ingredients, so for those who want more pancakes, I propose to double the portion.

Ingredients

    • 400 g (0,9 lb or 2 pcs.) young zucchini
    • 1/2 cup finely grated cheese (Gouda, Edamo, etc.) or farmer’s cheese
    • 5 tbsp. all purpose flour
    • 2 eggs
    • ¼ small onion
    • ¼ tsp. salt
    • 1/2 tsp. baking powder
    • oil (for frying)

    Recipe Directions

  1. 1. Grate zucchinis, put in a bowl and mix with salt.
  2. 2. Then put them in a sieve, place the sieve on a big bowl and leave zucchinis like this for 15 minutes.

  10. 9. Preheat some oil in a skillet over medium heat. Put 1 tbsp. of zucchini mass for each pancake and fry them on both sides until beautiful golden color.
