Lemon cheesecake


    • Oatmeal cookies: 200 g
    • Minced nuts: 5 tbsp
    • Room temperature butter: 100
    • Eggs: 4 (medium size)
    • Sugar: 1 cup
    • Lemon juice from 2 lemons
    • Corn starch: 2 tbsp
    • "Philadelphia" cheese: 250 g
    • Mascarpone: 250 g

    Recipe Directions:

  1. Chop fine oatmeal cookies and mix with minced nuts and soft butter. Pour the mixture into a baking tray (used 24 cm diameter), lined with baking paper. Spread and press a little bit with your hands. Put in the fridge for a while.
  2. Beat eggs with sugar, add room temperature cheese, pour starch and lemon juice. You can add some grated lemon peel, if you'd like. Mix everything to combine. Pour mixture in the same baking tray, spread a little.
  3. Preheat oven to 175 C temperature. Bake for about 8 minutes. When done, let pie chill in room temperature and then put in a fridge for couple hours. Enjoy.
