Do you know the taste of sour cream with potato pancakes or salads? Yes.. It is sooo delicious. And I was always wondering if it is possible to make it at home. So I started to search for ingredients which contains sour cream. The results I found surprised as sour cream could be made even with Cashew nuts. You have to leave cashew nuts in water for one night or boil it for few minutes to use it for vegan sour cream. Also salt, water and fresh lemon juice are needed, the amount of salt depends on your habits you can use it more or less as you wish. 

However, the recipe can be changed if you wish. For example, I tried to make vegan sour cream with 0,5 cup of cashew nuts and 0,5 cup of sunflowers and the taste was wonderful too. Therefore, one more experiment I have made, I changed cashew nuts with almonds (one cup), the taste is really amazing, yet it took a while to peel them off, so for the first time I recommend you to try this easy to make vegan sour cream with cashew nuts. 

Ingredients

    • 1 cup of Cashew nuts (drench it overnight or boil for few minutes in the water)
    • 0,5 teaspoon of salt (you can use even less if you wish)
    • 3 tablespoons of lemon juice (juice has to be fresh)
    • 3/4 cup of water (if you want to make sour cream more fat you can use less of water)

  1. 1. Firstly take cup of cashew nuts and blend it.

  3. 2. Add salt and 3 tablespoons of fresh lemon juice to blended cashew nuts and mix it.

  5. 3. Now you can pure the water and mix it. Just do not hurry to pure all the water, as you may wish it to be thicker (from water vegan sour cream becomes more fluid). Yet keep in mind that while cooling vegan sour cream gets a bit thicker so do not make too thick.
  6. 4. And that's it. Place mixture in fridge to cool. If you have to serve it quickly you can place it into freezer for about 7 minutes.
