Ingredients

    • shelled (without shell) king prawns: 400 grams (I used frozen, and if you have fresh ones, even better)
    • courgettes: 1 small one (cut into 1 cm thick slices)
    • red peppers: 0,5 (cut into large squares)
    • yellow peppers: 0,5 (I use different peppers for a nice play of colours, but you can choose one colour)
    • Onions: 2 (cut into quarters)
    • mushrooms: 4-5 (cut in half)
    • olive oil: ~5-6 tbsp (for drizzling over the vegetables)
    • salt
    • pepper
    For the prawn marinade:
    • Garlic: 3 cloves (crushed)
    • honey: 1 tbsp
    • lemon juice: from 1 pcs.
    • Sweet red chilli powder: 1 teaspoon
    • Curry: 1 teaspoon
    • salt
    • olive oil: ~2 tbsp.
    For serving:
    • fresh dill
    • lemon slices

    Recipe Directions

  1. 1. First, defrost the king prawns without the shell (if using frozen), which can be done by running warm water over them. Then drain.
  2. 2. Mix all the ingredients for the marinade, pour the marinade over the prawns and leave to marinate for about 30-60 minutes.

  4. 3. To prevent drying out, we chop the vegetables just before frying, drizzle them with olive oil, sprinkle them with salt and pepper, and stir them in.
  5. 4. Arrange the marinated prawns and the prepared vegetables on the grill or on skewers and cook on hot coals until lightly browned and softened (about 5-10 minutes on each side). It is important not to overcook the prawns to prevent them from drying out.
