Sometimes being on a diet gets really challenging as you start missing some of your favorite meals. Being only for one month on the diet made me to miss Lithuanian traditional meals as they mainly contains a lot of potatoes which KETO diet does not allow to use. Yet not only traditional dishes I have missed. One of my favorite weekly tradition was pancakes on Sundays. By starting KETO diet I had to change my Sunday habits as I had no idea how to make pancakes that would be low carbs. However, as you are used to have one day per week when you make pancakes and really enjoy it or it could be any habit, Sunday pancakes was mine, diet starts to be more difficult to follow. And here we are at the moment when right decision needs to be made. I had three opportunities:

1) Forget Sunday pancakes day and follow the diet (being sad counts into this point)
2) Quit the diet (that I was more likely to choose)
3) Try to make low carbs pancakes (yes.. time to explore)

I started to search for recipes of low carbs or KETO diet friendly meals and found out that daily products can be easily changed, such as milk can be changed with coconut or almond milk and meal becomes dairy free. Yes, it was very beginning of KETO diet in my world so that was new to me. Understanding that some products can be changed by others gave me an opportunity to start making my own recipes with a bit different ingredients. Imagine pancakes that has low carbs and are dairy free, therefore, they are KETO friendly. YES! Welcome back my Sunday pancakes! I understood that I should change milk to coconut/almond milk, usual flour to coconut/almond flour, butter can be changed with coconut oil, and eggs..Well we can still use eggs. :))

My first steps into KETO pancakes recipe were made without measuring ingredients. Yet I have noticed that some Sundays pancakes were more delicious than others (probably it depended on my mood:)), so I decided to measure products that are used (just to clarify if my mood was the reason). The recipe of KETO pancakes contains eggs, coconut oil, coconut flour, coconut or almond milk, sweetener of choice and cinnamon. As you can see all products are simple and easy to find, therefore, if you are already on the KETO diet you have these ingredients at home and if you just started your KETO diet you are welcome, buy these products, because they will be used in a lot of recipes, so get used to it. :)

Believe in me, I was not good at cooking from the beginning, so exploration of recipe took a while. I tried to make them so many times, yet they were not fluffy enough. That made me to do experiments to reveal the secret of fluffyness. However, one day I found out that the main thing that makes pancakes fluffy are egg whites! The stiffer whites you make the fluffier pancakes will be. Yup. Surprise! Yes, I know, probably it was surprise only for me, yet I finally found my own favorite recipe for Sunday pancakes day and it is my pleasure to share this easy KETO pancakes recipe with you!

Ingredients

    • 4 eggs
    • 90 grams of melted coconut oil
    • 2 tablespoons of coconut milk (also almond milk can be used)
    • 4 tablespoons of coconut flour
    • 1 teaspoon of sweetener of your choice (I used Stevia)
    • 1 teaspoon of cinnamon 
    • 1 teaspoon of baking powder

    Recipe Directions

  1. 1. Separate egg yolks and mix it with melted coconut oil, coconut flour and coconut milk. Add baking powder and sweetener. Stir it until dough becomes nice and smooth.

  3. 2. Next step is to whisk the egg whites until stiff peaks form in porcelain or metal bowl. It is right time to tell you, that from stiffness of egg whites depends how fluffy pancakes will be. Stiffer whites means fluffier pancakes.

  5. 3. Fold the egg whites into the mixture.
  6. 4. Heat some of coconut oil in a pan (better if its non-stick). With this amount of ingredients you can make pancakes (it is about 10 centimeters diameter). Temperature of frying should be medium or even low so they do not burn. Turn pancakes over once the top starts bubbling.
