Farmer Cheese Pancakes with Spinach
I could eat farmer cheese pancakes every day, no matter if they are sweet or not – I love all kind of farmer cheese pancakes πŸ™‚ One of the best things about farmer cheese pancakes is that they are made very quickly. As with all pancakes – you just have to mix the batter, fry them and voila – you can eat them. For these farmer cheese pancakes I tried something new – I added spinach into the dough. The result was very delicious, the pancakes became not only more nutritious, but also acquired a slightly different, summer taste. The amount of flour in a dough depends on the moisture of the farmer cheese. If the cheese is very moist, then add a little more flour, if drier – less. My used farmer cheese was quite dry and friable. Farmer cheese pancakes can be served with sour cream, tzatziki sauce or any other favorite sauce. Pancakes are very delicious both hot and cold.

    For 6 pancakes:
    • 250 g (0,5 lb) farmer cheese (9% fat)
    • 2 handfuls spinach
    • 1 egg
    • 5 tbsp. all purpose flour
    • 1 tbsp. chopped fresh parsley
    • 2/3 tsp. salt
    • 1/3 ttsp. ground black pepper
    • 1,5 tbsp. unsalted butter (for frying)
    • 1 tsp. vegetable or sunflower oil (for frying)

    Recipe Directions

  1. 1. Mix the farmer cheese with an egg and mash the mass with a fork.
  2. 2. Mix in flour, salt and pepper.

  4. 3. Place the spinach in hot water (not boiling) for a few seconds, then strain them off, drain with a paper towel and cut into smaller pieces.
  5. 4. Combine the spinach and parsley with a cheese mass using a spoon.
  6. 5. Preheat a skillet over a medium heat with oil and butter. Wet your hands, take 1 tbsp. of the dough and make ~1-1,5 cm (~1/3-1/2 in) thickness pancakes and fry on both sides until the pancakes get a nice brown color.
  7. 6. Place the pancakes on a paper towel to absorb the oil.
  8. 7. Serve with your favorite sauces. Enjoy your meal!
