I could eat farmer cheese pancakes every day, no matter if they are sweet or not – I love all kind of farmer cheese pancakes 🙂 One of the best things about farmer cheese pancakes is that they are made very quickly. As with all pancakes – you just have to mix the batter, fry them and voila – you can eat them. For these farmer cheese pancakes I tried something new – I added spinach into the dough. The result was very delicious, the pancakes became not only more nutritious, but also acquired a slightly different, summer taste. The amount of flour in a dough depends on the moisture of the farmer cheese. If the cheese is very moist, then add a little more flour, if drier – less. My used farmer cheese was quite dry and friable. Farmer cheese pancakes can be served with sour cream, tzatziki sauce or any other favorite sauce. Pancakes are very delicious both hot and cold.
