One of the most important ingredient in this salad is a spice mix. It is oregano, cumin and crushed red pepper that create a special aroma and taste. If you can’t find crushed red pepper in a supermarket, instead use 1/3 teaspoon of chili powder. Use your favorite tomatoes to make this salad. I used small, plum tomatoes. Of course, well-ripened, or small, sweeter tomatoes would work the best (then you get a very good balance of salty feta cheese and sweet tomatoes). And if you have tomatoes from your garden (which makes me very jealous!), then you’ll have a fantastic salad. By the way, you can replace blue onion with yellow or white onion.
For this salad, it would be best to use feta cheese that could be crumbled. Feta cheese I used was quite brittle, so I could crumble it easily. Some feta cheese have more creamy consistency, then your salad might look more like a porridge, so to avoid this, pay attention to what feta cheese you plan to use. This fresh salad is irreplaceable with grilled meat, fish, steaks or roasted chicken.
