Chicken, Tomato and Cheese Pasta
Pasta can be prepared in a variety of ways. I usually prepare it this way – I make the sauce, cook pasta and then mix everything together. Only in this way a lot of pots and bowls are getting dirty. Therefore, when you don’t want to wash piles of pots and pans, this pasta recipe is a real salvation. All the cooking takes place in one pot. Isn’t that great?? And the simplest ingredients will be needed to make the dish. Chicken, canned tomatoes, cheese and pasta – you simply can’t fail with them!

If you have a large amount of fresh, well-ripe tomatoes, then put them in hot water for about 6-8 minutes, peel, blend using a blender and use in the same way as canned tomatoes.

Ingredients

    • 500 g (1-1.1 lb) chicken breast
    • 420 g (15 oz) crushed tomatoes
    • 350 g (12 oz) favorite pasta
    • 200 g (8 oz) tomato sauce
    • 80 g (1 cup) Parmesan cheese
    • 80 g (1 cup) mozzarella cheese (can be replaced with “Gouda“ or “Edam“ cheese)
    • 800 ml (3 1/3 cups) water
    • 1 small onion
    • 3 cloves garlic
    • 2 tbsp. olive oil
    • 1/3 tsp. dried oregano
    • 1/3 tsp. dried thyme
    • 1/3 tsp. dried rosemary
    • 1/3 tsp. dried marjoram
    • salt, black pepper

    Recipe Directions

  1. 1. Cut chicken into medium size pieces.
  2. 2. Grate parmesan cheese using a fine grater.

  4. 3. Peel onion and garlic cloves. Dice onion and mince garlic using a garlic press.
  5. 4. In a large saucepan preheat olive oil over medium-high heat, add chicken, sprinkle with dried oregano, thyme, rosemary, marjoram, salt, black pepper and fry for about 4 minutes without stirring, then stir and fry for another minute.
  6. 5. Add onion, garlic and fry for a couple more minutes. Add half of Parmesan cheese, crushed tomatoes, pour water, bring to a boil and simmer for 15 minutes over low heat.
  7. 6. Add pasta to the same pot, stir, add salt and bring to a boil.
  8. 7. Then cover the pot with a lid, reduce the heat to low and cook for 10-15 minutes until pasta is done. The cooking time of pasta depends on the type of pasta you are using, so after 10 minutes you can check whether the pasta is cooked or whether it needs a few more minutes.
  9. 8. Grate mozzarella, mix with Parmesan cheese, sprinkle on top of pasta, turn off the heat, cover the pot and let cheese melt. Enjoy your meal!
