Healthy Pasta with Tuna and Green Beans
I have always thought, and I still think so, that only the most unexpected and interesting combinations of ingredients, which are ultimately called recipes, can happen in the kitchen. My combination includes pasta, tuna and green beans. It would seem that these ingredients could not even go together, but in fact, it’s a very delicious dish. I found such a combination quite unexpectedly when I had some green beans left in the fridge. Oh, and couple of tuna cans were at hand, so why not to try to combine everything into one  dish? It was really a delicious lunch, therefore the recipe is already on my blog 🙂

I know that not everyone likes fresh cilantro, so if you don’t like it, you can replace it with fresh parsley. You can also use any tuna you like – in oil or water. Only if you use tuna in oil, you will have less to add during the cooking. Yum!

Ingredients

    • 300 g (10 oz) canned tuna in oil or water
    • 250 g (0.5 lb) your favorite pasta
    • 100-150 g (3.5 – 5 oz) green beans
    • 4 tbsp. soy sauce
    • 1 large carrot
    • 6 tbsp. ketchup
    • 1 cup chopped fresh cilantro
    • 1 lemon
    • 1 medium size onion
    • 1 garlic clove
    • 1 tbsp. paprika powder
    • 1 slice lemon
    • 1 handful chopped green onions
    • salt, pepper

    Recipe Directions

  1. 1. Boil pasta, just do not overcook. Pasta has to be al dente.
  2. 2. First mix tuna with 1 lemon juice and leave it to marinate in the fridge for ~15-20 minutes.

  4. 3. Grate the carrot using a larger grater, peel and dice the onion.
  5. 4. Preheat frying pan with some oil over medium-high heat, add the vegetables and fry for about a couple of minutes.
  6. 5. Cut green beans into ~3 cm (~1 inch) length pieces, put them in a pan together with carrot and onion. Fry for about 5 minutes.
  7. 6. Mince garlic, add to the pan together with beans and give it a stir.
  8. 7. Season vegetables with salt, pepper and fry for about 5 minutes over low heat.
  9. 8. Add soy sauce, ketchup, paprika powder and chopped cilantro to the pan. Give it a stir. Then add tuna and stew everything for ~5 minutes.
  10. 9. At the end, squeeze juice of 1 lemon slice.
  11. 10. Finally add pasta and mix.
  12. 11. Serve pasta sprinkled with chopped green onions. Enjoy!
