Healthy wholemeal flaxseed muffins with wholemeal flour
It's really super simple to make these healthy muffins. This recipe serves perfectly as a base for adding whatever toppings you like. This time I didn't add nutmeg or cinnamon, but chose to add about three quarters of a cup of raisins. I thought it would be ideal to add fresh or frozen berries, bananas, apples, various dried fruits, grated courgettes or carrots. I chose to use semi-skimmed milk.


    • whole wheat flour: 1½ cups
    • ground flaxseed: 1½ cups
    • brown sugar: three-quarters of a cup
    • baking powder: 1 tablespoon
    • flour: three-quarters teaspoon
    • cinnamon: 1.5 teaspoon
    • milk: 2 cups
    • eggs: 1 (scrambled)

    Recipe Directions

  1. 1. First, preheat the oven to 180 degrees.
  2. 2. Line a muffin tin with paper muffin liners (or simply grease with oil).

  5. 4. In a separate bowl, whisk the egg and pour in the milk.
  6. 5. Add the whipped cream to the dry ingredients and stir.
  7. 6. Pour the batter into the muffin tins, filling three quarters of each tin.
  8. 7. Bake for about 20-25 minutes until nicely browned. Enjoy!
