Delicious oven-roasted garlic-lemon salmon with potatoes and vegetables
Sometimes, even with little time, it's possible to make really tasty, nutritious meals. That's exactly what I had for dinner tonight. The oven did most of the work for me. I really like to have lots of different colours and flavours on my plate. I always prefer green, because it is the colour of vegetables that is the most beneficial for our bodies.

I try to buy more expensive salmon, and I try to buy sea salmon from Norway. I think it is better to eat a smaller quantity of a better quality product than to eat useless, harmful food at a cheaper price.

This dish is very quick and easy to prepare. I cooked the salmon in the oven. The garlic-lemon salmon with potatoes and vegetables was particularly light and pleasant tasting when baked.

Ingredients

    • Salmon fillet: 2 pieces of 225 grams each
    • Melted butter: 1 tbsp
    • Crushed garlic: 2 cloves
    • Freshly squeezed lemon juice: 2 tbsp
    • Fine chopped fresh parsley: 2 tbsp
    • chilli flakes: quarter teaspoon
    • sea salt: pinch
    • black pepper: pinch
    • lemon slices
    For the potatoes: 
    • chopped potatoes: 600 grams
    • olive oil: 1 tsp
    • red pepper: 1 tsp
    • sea salt: pinch
    • black pepper: pinch
    You will also need:
    • broccoli: 1 cup (separated by florets)
    • various lettuce leaves
    • rucola

    Recipe Directions

  1. 1. Preheat the oven to 200 degrees.
  2. 2. Place the baking paper on a baking tray and add the salmon pieces.

  4. 3. Then, in a bowl, combine the melted butter, lemon juice, salt, pepper, parsley and garlic. Pour over the salmon, add the lemon slices and sprinkle with chilli flakes.
  5. 4. In a large bowl, mix the potatoes with the oil and spices.
  6. 5. Place the baking paper on a baking tray. Place the potatoes on the baking tray, so that they touch each other as little as possible. Bake for approximately 18 minutes.
  7. 6. Transfer the potatoes to the bottom of the oven. Add the salmon. Bake for approximately 12 minutes.
  8. 7. Blanch the broccoli. Leave for a few minutes in boiling water. Drain.
