Whole salmon baked in the oven with parsley and tomatoes
Even if there are only two people in your family, that's no reason not to buy a whole salmon. Especially if you hit a good deal. Once you've cooked the salmon once in the oven, you'll have food for at least two more days (of course, if you're a huge salmon lover like me, you can get through 1.5 kg of salmon in one evening). Personally, I really like this recipe - everything is cooked in one pan, so you don't have to worry about a separate side dish.

I would like to remind everyone to make sure that when you choose your fish, the scales are nice and snug, the skin is not flaky, and that the eyes are as clear as possible. When the fish is returned, wash and rinse the inside well and shave off the scales.

    • salt
    • five kinds of ground pepper

    • salmon: 1 (~1.5 kg)
    • parsley: 1 bunch
    • red onion: 1 bunch

  4. 3. Slice the potatoes and place them on a baking tray.
  5. 4. Drizzle with oil, season with salt and pepper and mix everything together. Smooth the potatoes over the entire surface of the tin.
  6. 5. Then peel the lemon and peel the lemon as if you were peeling an orange. This way, the salmon will not be charred from the white part of the peel, but will smell of the wonderful lemon scent.
  7. 6. Chop some of the parsley and oregano and mix with the lemon zest.
  8. 7. Using a sharp knife (preferably serrated), make about 5-6 slits in the fish on both sides, about 1,5-2 centimetres deep.
  9. 8. Rub them with salt and pepper and add herbs.
  10. 9. Place the prepared salmon on the potatoes.
  11. 10. Bake at 250 degrees for about 15 minutes, then reduce the heat to 180 degrees and bake for another 25-30 minutes.
  12. 11. If you are also frying tomatoes, add them at reduced heat and fry together for 25-30 minutes. If you are going to cook asparagus, add it 10 minutes before the end of cooking. Enjoy!
