This hot side dish of stewed vegetables is a great accompaniment not only to chicken, but also to fish or salmon dishes. Although I personally find it very tasty on its own too! I have to admit that my own side dish is usually a fresh vegetable or salad. So this time I wanted to come up with something a little more interesting.
I made my hot side dish with carrots, zucchini, canned corn, fresh dill and a little tomato sauce. I sautéed everything until the vegetables were soft. I served the side dish while it was still warm.
I used a grater designed for grating straws. It is very convenient to slice the vegetables in this way.
The vegetables must be soft when fried, but still hold their shape well. You can also bake them a little shorter if you want them to be crispy. Let's get cooking!
