Oh yes! Warming, filling and such a delicious tortellini soup. Simply perfect for chilly/cold weather (depending on where you live). It’s a soup and also a whole meal in one. Believe me, after eating a bowl of this soup you feel full and you won’t even need a main dish.
You can use both tortellini dumplings and simple smaller dumplings (Ukrainian style) for this soup. Mushrooms give a very good taste to the soup, so I definitely suggest not to skip them from your ingredient list. Of course, if you have dried mushrooms, then I envy you, because the soup will come out even tastier than with ordinary mushrooms. To add an extra flavor, I serve soup with finely grated Parmesan cheese on top. If you don’t have fresh spinach, don’t worry, even without them the soup will be delicious. By the way, if you want more liquid soup do not add flour. I wanted the soup to be a little more on the creamy side, so I added flour.
