Veggie, Mushroom and Tortellini Soup
Oh yes! Warming, filling and such a delicious tortellini soup. Simply perfect for chilly/cold weather (depending on where you live). It’s a soup and also a whole meal in one. Believe me, after eating a bowl of this soup you feel full and you won’t even need a main dish.

You can use both tortellini dumplings and simple smaller dumplings (Ukrainian style) for this soup. Mushrooms give a very good taste to the soup, so I definitely suggest not to skip them from your ingredient list. Of course, if you have dried mushrooms, then I envy you, because the soup will come out even tastier than with ordinary mushrooms. To add an extra flavor, I serve soup with finely grated Parmesan cheese on top. If you don’t have fresh spinach, don’t worry, even without them the soup will be delicious. By the way, if you want more liquid soup do not add flour. I wanted the soup to be a little more on the creamy side, so I added flour.

Ingredients

    • 300 g (10 oz) tortellini with chicken or cheese
    • 250 g (8 oz) mushrooms
    • 100 g (4 oz) spinach
    • 4 1/2 cup chicken broth
    • 2 cups milk
    • 1/3 cup heavy cream
    • 1 medium size onion
    • 3 medium size carrots
    • 50 g (4 tbsp.) unsalted butter
    • 3 tbsp. all purpose flour
    • 3 garlic cloves
    • 1/2 tsp. dried oregano
    • 1/3 tsp. dried thyme
    • salt, black pepper
    • olive oil

    Recipe Directions

  1. 1. Peel onion, garlic cloves and carrots.
  2. 2. Dice onion, mince garlic cloves, slice carrots and mushrooms.

  4. 3. Preheat a little olive oil in a large pot over medium heat, then add butter, allow to melt.
  5. 4. Add onion, carrots, mushrooms and fry for ~ 3 minutes, then add garlic and fry for another minute. Add flour, mix well.
  6. 5. Pour in chicken broth, season with oregano, thyme, salt, pepper and bring to a boil. Boil for about 10 minutes.
  7. 6. Pour in milk, add tortellini and cook for another ~7 minutes until tortellini is cooked.
  8. 7. Add spinach, stir and simmer for a minute (but no longer). Then add heavy cream.
  9. 8. Season with salt to taste and enjoy!
