Perfect creamy mashed tomato soup
You know that feeling when you are eating your own home-made dish and it feels like you're in a restaurant. That is the feeling when I first time tasted this wonderful tomato soup. I couldn't believe that only a few simple ingredients could make such a delicious soup. Immediately, I share the recipe with you my dear blog followers 🙂 

Anyways, there is not a very big selection of soups in restaurants in the USA, but if tomato soup is on the menu, it is one of my favorite choices. Making this soup is actually as simple as two times two. Canned tomatoes, onions, garlic, broth and a little bit of spices. Simply boil it and it's ready to eat! If you live in Lithuania I would recommend using canned tomatoes that are not very acidic, otherwise your soup will be quite sour or you will need to add more sugar. Of course, you can also use fresh tomatoes, only then I would suggest roasting them in an oven until soft. In the USA, canned tomatoes are very low in acidity, so one tablespoon of sugar is enough to balance the taste. By the way, about 4-5 bowls of soup come out of the listed ingredients. If your family is larger - double the portion. Bon appetit! 😉

    • 800g (29 oz) canned diced tomatoes
    • 200 g (2 medium sized) onions
    • 3 cups chicken broth (or 1 cube of chicken bouillon and 3 cups of water)
    • 2 garlic cloves
    • 4 tbsp. all purpose flour
    • 2 tbsp. olive oil
    • 2 tbsp. butter
    • 1 tbsp. sugar
    • 1/3 tsp. black pepper
    • 1/3 tsp. dried basil
    • 1/3 tsp. dried thyme
    • salt
    • fresh basil leaves (to garnish)
    • grated Parmesan cheese (to garnish)

    Recipe Directions

  1. 1. Peel the onions and dice them.
  2. 2. Preheat olive oil and butter in a pot over medium heat. Add diced onions and fry until soft. Keep stirring from time to time, and don't let the onion to burn.

  4. 3. Peel garlic cloves and crush them using a garlic press. Add to the pot together with onions, mix, fry for a few minutes over low heat. Stir constantly to keep the garlic from burning. Then add flour, black pepper, thyme, basil and fry for a few minutes, stirring constantly.
  5. 4. Add tomatoes to the pot and mix well. Then pour the broth, add sugar and heat over medium heat until the soup starts boiling. Cover the pot, reduce the heat to low, and simmer for 40 minutes. When the soup is done, blend it and add salt to taste.
  6. 5. Serve garnished with fresh basil leaves, Parmesan cheese and garlic bread. Delicious!
