When you enable your fantasy you can create the best tasting dishes from the simplest ingredients. That’s how I made this zucchini appetizer (or it could be a side dish, depending on how and what you’ll be serving with it). The main ingredients are zucchini, garlic and parsley. I don’t count olive oil, salt or pepper, these are the basic ones. I think sometimes completely simple recipes are the best.
Lately, I’ve been making a lot of quick and easy meals, appetizers in order to spend less time in the kitchen. It’s just that kind of stage right now. Sometimes I come up with something more complicated. This happens when I dream of some fantastic dish day by day, but usually those take longer to prepare and are more complicated. Therefore I almost always prefer quick recipes. And this recipe is exactly like that, quick to prepare and simple.
Well, you may say, but to wait until zucchini sits in a sieve for 30 minutes is nothing fast here?! Yes, I agree, but while waiting, I clean the kitchen, do the dishes or something else useful. It depends how are you using your free time.
And here is a bit about the dish. Zucchini should not be overcooked, so make sure to keep the sides of zucchini crispy. Believe me, the combination of lightly crispy slices of zucchini and parsley/garlic mixture is a very delicious one. Of course, if you like more sophisticated flavors – use a variety of spices in addition. With such simple dishes like this one, it’s extremely easy to experiment.
